mama san Panko Breadcrumbs Banana Fritters

  • 4 ripe bananas
  • 1 cup all-purpose flour (about 120g)
  • 1/4 cup cornstarch (about 30g)
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 cup sparkling water or club soda (240ml)
  • 1 cup mama san Panko Breadcrumbs
  • Vegetable oil for frying
  • Vanilla ice cream
  • Fresh strawberries for topping, sliced

  • Peel the bananas and cut them into bite-sized pieces.
  • In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and a pinch of salt.
  • Slowly add the sparkling water or club soda to the dry ingredients, whisking continuously until you have a smooth batter.
  • Place the Mama San panko breadcrumbs in a shallow dish.
  • Heat vegetable oil in a deep fryer or a large, deep pan to 180°C (350°F).
  • Dip each banana piece into the batter, allowing excess batter to drip off, then roll it in the panko breadcrumbs until well coated.
  • Carefully place the coated banana pieces into the hot oil, frying in batches for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place them on a plate lined with paper towels to absorb excess oil.
  • Once all the banana fritters are fried, let them cool slightly.
  • Serve the banana fritters with a scoop of vanilla ice cream on the side.
  • Top the ice cream with fresh strawberry slices.

Optionally, drizzle some honey or chocolate sauce over the top for extra sweetness.
