Hana’s Beef Tataki Recipe Serves 4 DRESSING 1 tsp fine grated garlic 1 tsp fine grated ginger ¼ onion grated or finely diced ¼ cup Yamasa teriyaki sauce 3 tbsp rice vinegar or 2 tbsp white vinegar 1 tbsp Kuki naturally pressed sesame oil STEAK 2 sirloin steaks ~ 500g Salt and pepper 2 tbsp cooking oil SALAD 1 cup daikon radish - peeled and cut into thin strips 2 large handfuls mesclun greens or mizuna Salt and pepper 1 spring onion greens - finely sliced METHOD 1. Pat the steak dry with a paper towel, and generously season with salt and pepper. Set aside on the bench at room temperature for about 30 minutes. 2. Meanwhile, combine all dressing ingredients and set aside for flavours to meld. 3. Prepare a heavy bottomed pan, and bring to high heat with 1 tbsp oil per steak. Once the oil is smoking, sear each side for 1 to 2 minutes or until a dark crust is formed. Repeat for the second steak. Transfer onto a chopping board and allow to rest for 10 minutes. Once rested, cut the steak into strips as thin as possible. 4. In a large bowl, add the daikon, mesclun greens, a pinch of salt and pepper, and 2 tbsp of the dressing. Toss to combine. 5. Pile the salad into the middle of your serving plate. Layer the steak around the salad and top with the spring onion. Drizzle the dressing over the steak. 6. This is proper Japanese comfort food! Serves 4 Ingredients: - 4 × 130g pork loin - Pinch of salt & black pepper - Plain flour, 1 beaten egg + 3 whole eggs - mama san Panko breadcrumbs - Oil for deep frying - 100g onion, thinly sliced - Chives for garnish - 800g cooked mama san Sushi Rice - S&B Assorted Chili Pepper (Nanami Togarashi) – the star finish! Sauce: - 2 Tbsp mama san Soy Sauce - 2 Tbsp mama san Mirin - 1 tsp sugar - 1 Tbsp mama san Cooking Sake - 200ml water Method: 1. Flatten pork, season, coat in flour → egg → panko. Deep fry at 170°C until golden. Slice into strips. 2. Simmer sliced onions in the sauce until tender. 3. Add pork slices back in, pour over lightly beaten eggs. Ingredients For the slaw: - 2 cups green cabbage, finely sliced - 2 cups red cabbage, finely sliced - 2 large carrots, grated - 1 red capsicum, sliced - 3 spring onions, finely sliced - ½ cup fresh coriander, chopped Tangy Asian Dressing: - 1 tsp Kuki sesame oil - 3 Tbsp vegetable oil - 3 Tbsp mama san rice wine mirin - 3 Tbsp lemon juice - 3 Tbsp honey - 1 Tbsp mama san soy sauce - 1 Tbsp Garden Gourmet ginger paste - ½ tsp Garden Gourmet garlic paste - ½ tsp Gourmet Garden chilli paste - ½ tsp salt Crunchy Topping: - ¼ cup FreshLife chopped peanuts - 3 Tbsp FreshLife sesame seeds Instructions 1. Toast the crunch Place peanuts and sesame seeds in a dry frying pan. Toast over medium heat, stirring frequently, until sesame seeds turn pale golden (≈ 3–5 mins). Set aside to cool. 2. Ingredients 2 Free Range fresh chicken thigh fillets ? salt ?️ pepper 1/2 cup plain flour ? 1 Egg, beaten ? 1 cup mama san panko breadcrumbs ? Katsu sauce 3 tbsp Worcestershire sauce ? 2 tbsp mama san mirin ? 2 tbsp tomato ketchup ? 1 tbsp water ? 1 cup finely shredded cabbage ? 2 portions cooked mama san sushi rice ?️ Cooking oil for shallow frying ? Kitchen paper towel to drain ? Serve with mama san instant miso soup ? Method 1. Lay out and place chicken between 2 sheets of baking paper or cling film and pound lightly with a rolling pin to flatten slightly and make the piece evenly thick.
