• 2 cups mama san sushi rice ๐
• 2 ¾ cups water ๐ง
• 450g beef (or chicken, lamb, prawns, or tofu for variety) ๐ฅฉ
• 350g onion, chopped ๐ง
• 100g carrot, chopped ๐ฅ
• 150g potato, chopped ๐ฅ
• 1 tbsp cooking oil ๐ข๏ธ
• 540ml water ๐ฆ
• 1 packet S&B Golden Curry ๐
Instructions
1. Rinse the rice until water runs clear, then add the 2 ¾ cups water and cook (rice cooker or stovetop). ๐
2. Chop the beef/protein, onion, carrot, and potato into bite-sized pieces. ๐ช
3. Season the beef with a pinch of salt & pepper. ๐ง
4. Heat oil in a large pot over medium-high. ๐ฅ
5. Brown the beef for a nice crust (this adds so much flavour!). ๐ฅฉ

- Salt & pepper
- ½ cup (about 50-75g) plain flour
- 2 eggs, beaten
- 1 ½ cups (about 75-100g) mama san Panko Breadcrumbs

For the curry sauce:
- 1 pack S&B Golden Curry Sauce Mix (92g)
- Water (follow pack instructions, typically around 500-720ml depending on pack size)
To serve:
- mama san Sushi Rice, cooked (enough for 4 bowls)
- Broccolini, charred/grilled

Step-by-step method
1. Prep the chicken: Butterfly the chicken breasts (slice horizontally to open like a book), then lightly pound to even thickness. Season with salt and pepper.
2. Set up breading stations: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Dredge each chicken piece in flour (shake off excess), dip in egg, then coat generously in panko, pressing to adhere.

This Teriyaki Chicken Donburi is simple, satisfying healthy comfort food at its best. Juicy chicken glazed in a glossy homemade teriyaki sauce is served over warm sushi rice with crisp veggies, edamame, and a little Kewpie on top. Balanced, nourishing, and full of flavour, it’s an easy weeknight bowl that never disappoints. ๐
Serves 2
Teriyaki Sauce
¼ cup mama san soy sauce
¼ cup mama san sake
¼ cup mama san mirin
1 tbsp sugar (optional)
1. Combine ingredients in a large saucepan over high heat
2. Bring to boil, then turn heat down and simmer until it reduces by half. The consistency should be like a light syrup. The wider the pan, the faster it will reduce so keep an eye on the reduction. For me it takes about 10 minutes. โจ
Teriyaki Chicken Donburi
2 tsp cooking oil
1 large chicken breast
1 tbsp teriyaki sauce
1 tbsp water
2 servings freshly cooked mama san sushi rice ๐
1 cup mama san shelled edamame, cooked ๐ซ
โ cabbage, finely shredded ๐ฅฌ
½ carrot, julienned ๐ฅ
¼ cup mama san sushi ginger
Kewpie mayonnaise
2 tbsp sliced spring onion greens ๐ฑ
S&B nanami/shichimi/7 spice ๐ถ๏ธ
Extra teriyaki sauce
1. Add the cooking oil to a frying pan and bring to high heat ๐ฅ
2. Brown the chicken on both sides until very golden
3. Reduce to medium-low heat and add 1 tbsp teriyaki sauce and 1 tbsp water
4. Cover with a lid and simmer for 10 minutes or until cooked through. Flip the chicken half way through
5. Transfer to a chopping board and slice ~0.5cm thick. Pour the pan sauce over the chicken ๐
6. Assemble the donburi bowls starting with the rice, then vegetables, chicken, sushi ginger, a dollop of mayo, spring onions and pour over some extra teriyaki sauce ๐ฅ

For the slaw:

๐ฅฌ 2 cups red cabbage, finely sliced
๐ฅ 2 large carrots, grated
๐ซ 1 red capsicum, sliced
๐ฑ 3 spring onions, finely sliced
๐ฟ ½ cup fresh coriander, chopped
Tangy Asian Dressing:
๐ข๏ธ 1 tsp Kuki sesame oil
๐ข๏ธ 3 Tbsp vegetable oil
๐ถ 3 Tbsp mama san rice wine mirin
๐ 3 Tbsp lemon juice
๐ฏ 3 Tbsp honey
๐ฅข 1 Tbsp mama san soy sauce
๐ซ 1 Tbsp Garden Gourmet ginger paste

Instructions
1. Toast the crunch ๐ฅ
Place peanuts and sesame seeds in a dry frying pan. Toast over medium heat, stirring frequently, until sesame seeds turn pale golden (≈ 3–5 mins). Set aside to cool.
2. Prep the slaw ๐ฅ
Toss green cabbage, red cabbage, grated carrot, sliced capsicum, spring onions and chopped coriander together in a large bowl.
3. Shake up the dressing ๐ซ
Add all dressing ingredients to a screw-top jar. Shake shake shake! ๐ Taste and adjust – more honey for sweetness, more sesame oil for nuttiness, or extra salt if needed.
4. Dress & toss ๐
Pour dressing over the slaw and mix until everything is beautifully coated.

1๏ธโฃ Noodles: ๐ Prepare soba noodles according to the packet instructions. Rinse well in cold water to stop cooking and set aside.
2๏ธโฃ Eggs: ๐ฅ Boil eggs in boiling water for 8 minutes. Transfer immediately to iced water to cool, then peel and cut in halves.
3๏ธโฃ Veggie Prep: ๐ฅ Slice radishes, cucumber into ribbons, spring onions, and avocado. Sprinkle lemon juice on the avocado to prevent browning.

- ¾ cup granulated sugar ๐
- ¼ cup water ๐ง
- ½ cup cream ๐ฅ
- 2 tbsp mama san Miso Paste ๐พ

Instructions ๐ฉ๐ณ
1. In a heavy-based pot on medium heat ๐ฅ, add the sugar and water and stir to combine.
2. Bring mixture to a boil without stirring.
3. Reduce heat and let it bubble ๐ซง and caramelise until the sugar becomes a deep golden brown and wisps of smoke just start to form, then remove pot from heat.
4. Once off the heat, carefully pour in the cream in two batches while stirring to combine ๐ฅ.
5. If the caramel starts hardening up, return to the stove on low heat and stir until the caramel is liquid again.
6. Whisk in the miso.
7. Set aside to cool ๐ง

๐ Prepare the Rice Filling
1๏ธโฃ Cook the Mama San fried rice according to the
packet instructions.
2๏ธโฃ Add the edamame beans to the rice and stir well,
cooking until heated through. Toss the rice often to
combine evenly.
๐ฅ Prepare the Tornado Egg ๐ช๏ธ
1๏ธโฃ In a bowl, whisk together the eggs, yolks, a pinch of
salt, and milk until smooth.
2๏ธโฃ Heat a small non-stick frying pan over medium-low
heat and melt a generous knob of butter.
3๏ธโฃ Pour half of the egg mixture into the pan.
4๏ธโฃ As the egg starts to set, use chopsticks or tongs to
gently pull the edges toward the centre, creating folds.
5๏ธโฃ Continue twisting and rotating the pan slowly to
form a spiral or “tornado” shape. Once the egg is set
but still creamy in the centre, carefully remove it from
the pan and set aside.
6๏ธโฃ Repeat with the remaining egg mixture to make the
second tornado egg.
๐ด Assemble the Tornado Omelette
1๏ธโฃ Spoon half of the fried rice into a small bowl, gently
pressing it down to form a neat shape. Invert the bowl
onto a plate to create a mound of rice.

Instructions

Ingredients:
- 1 large chicken breast ๐
- 2 bundles mama san soba noodles ๐
- ½ red capsicum, sliced ๐ถ๏ธ

- 1 cup green beans, blanched ๐ซ
- ¼ cup finely sliced spring onion greens ๐ฟ

Method:

- ¼ pumpkin ๐
- 3 tbsp olive oil ๐ซ

- 1 spring onion ๐ฑ
- 185g can tuna, drained ๐

- 2 tbsp S&B crunchy garlic chilli oil ๐ถ๏ธ

3๏ธโฃ In a small bowl, whisk together Kewpie mayo, Greek yoghurt, Dijon mustard, lemon juice, and olive oil until smooth and creamy. Season with salt & pepper ๐๐ฅ

- 2 cups mama san sushi rice
- 2 cups water
- 50ml mama san sushi vinegar
1. Cook rice according to the packet, or follow the rice cooking tutorial in a previous post
2. In a large wide bowl, add the freshly cooked hot rice and mama san sushi vinegar
3. Gently fold the rice to mix the sushi vinegar. Do this carefully to ensure you don’t crush the rice grains
4. Set aside to cool for 15 minutes
๐ฅ Assembly
- 1 cup mama san edamame (boil 2 mins & drain)
- 1 avocado, sliced
- ½ cucumber, sliced
- โ cup mama san sushi ginger
- 1 spring onion, finely sliced
- 4 lemon wedges

Melting soft eggplant with an umami-packed caramelised miso glaze – glazed - what more could you want? ๐ฅข This sweet and savory miso combo is a common sauce used in Japan and is very versatile, so you can try this with other vegetables and protein too.

Ingredients
- 1 eggplant
- A pinch of salt
- 3 tbsp cooking oil
- 3 tbsp mama san Miso Paste
- 2 tsp mama san Mirin
- 1 tsp mama san Cooking Sake
- 1 tsp sugar
- 1 spring onion, finely sliced ๐ฑ
Steps
1. Preheat oven to 220°C on bake function ๐ฅ
2. Slice the eggplant in half lengthwise, then score the cut side in a criss-cross pattern (a few mm deep)
3. Lightly salt and oil the cut faces
4. Place cut-side down on a lined baking tray and bake for 15 minutes
5. While it bakes, mix the mama san Miso Paste, mirin, cooking sake, and sugar in a small bowl until smooth
6. After 15 minutes, flip the eggplant cut-side up and spread the miso glaze generously ๐คค

- 4 United Food Co. steamed bao buns

Method

3. Open each warm bao and start the stack: pop in a hot crumbed dory fillet

- In a bowl mix ¼ cup vinegar + 1 tsp sugar + ½ tsp salt + pinch of chilli flakes (optional)

Elevate your breakfast with this umami-packed twist! Sweet miso-glazed bacon, sunny-side-up eggs on wasabi-mayo smashed avo toast, and a zingy quick-pickled cucumber "tataki-kyuri" salad. ๐ Burst of flavours in every bite!

- ½ telegraph cucumber, sliced lengthways

- 1 tbsp Kuki sesame oil
- 1 tbsp white sesame seeds, lightly toasted โจ

- 1 tbsp Kewpie mayo
- 3–4 cm mama san wasabi paste (adjust for heat! ๐ฅ)
- Salt & pepper to taste

- 250g Streaky bacon (1 pack)
- 2 tbsp mama san miso paste
- 1 tbsp maple syrup ๐

- Oil for frying
- 4 Eggs size 8 eggs
- 4 thick bread slices
- 1 spring onion, finely sliced ๐ง

1. ๐ฅ Preheat oven to 200°C. Line tray with baking paper, lay out bacon. Mix miso + maple syrup (thin with water if needed). Brush on generously & bake 10–12 min till golden. Keep warm!
2. ๐ฅ For cucumber: Smash halves in a zip-lock bag with a rolling pin. Add chilli, vinegar, soy, sesame oil & seeds. Seal & fridge for 15 min.
3. ๐ฅ Crush avos with fork, mix in Kewpie mayo + wasabi. Season with salt & pepper.๐ถ๏ธ
4. ๐ฅ Heat oil in pan over med-high. Fry eggs 3–4 min till whites set but yolks runny.
5. ๐ Toast bread, spread with avo mix. Top with bacon, egg & pickled cukes. Garnish with spring onion. Dig in!

โจ Bougie: sashimi-grade fish
โจ Mid: teriyaki chicken
โจ Budget: teriyaki tofu or tuna mayo ๐
Serves 4 people (8 pieces each ๐ฑ)
Ingredients ๐
- 2 cups mama san sushi rice
- 2 cups water
- 50 ml mama san sushi vinegar
- 100 g smoked salmon ๐
- ¼ carrot ๐ฅ
- ¼ cucumber ๐ฅ
- ¼ capsicum ๐ซ
- ½ avocado ๐ฅ
Sushi Rice ๐
1. Measure 2 cups of mama san sushi rice into your rice cooker (see rice video for instructions to cook rice with a pot)
2. Fill with water, wash, drain, and repeat 3 times
3. Once well drained, measure 2 cups of water and add into the pot and cover with a lid
4. Turn rice cooker on
5. After it has cooked, let it stand for 15 minutes
6. Do not remove the lid until now
7. In a large wide bowl, add the freshly cooked hot rice and 50ml of mama san sushi vinegar
8. Gently fold the rice to mix the sushi vinegar. Do this carefully to ensure you don’t crush the rice grains
9. Set aside to cool to room temperature

1. Slice the vegetables into thin strips
2. Unpack the smoked salmon
3. Prepare the fillings onto a plate ready for rolling

Udon Carbonara Recipe๐๐ฎ๐น๐ฏ๐ต
This is an Italian-Japanese fusion, so you purists out there may want to look away. This Udon Carbonara swaps pasta for chewy udon noodles, keeps the creamy, cheesy sauce, and adds crispy bacon for that ultimate comfort factor. The spring onion, seaweed, and shichimi/nanami togarashi gives it a distinctive Japanese flavour profile. Quick, indulgent, and totally crave-worthy—this one’s a weekday dinner winner! ๐
Serves 2
Ingredients:
- 1 tsp ground black pepper ๐ง
- 2 eggs ๐ฅ๐ฅ
- 50g grated parmesan ๐ง
- 2 bundles mama san udon
- 4 rashers streaky bacon ๐ฅ
- ¼ cup udon water ๐ง
- ¼ sheet mama san sushi seaweed, cut into small strips ๐ฟ
- 1 spring onion, finely sliced ๐ง
- S&B Shichimi/nanami togarashi (Japanese 7 spice mix) - optional ๐ถ๏ธ
Instructions:
1. In a large bowl, whisk the pepper, eggs, and parmesan and set aside ๐ฅฃ
2. Finely dice the bacon, and cook on medium-low heat until the fat renders out and the bacon goes crispy. Keep in the pan, and set aside ๐ฅ
3. Boil the udon and reserve ¼ cup of the cooking water. Once cooked, drain and set aside ๐ฒ
4. Bring the bacon pan back to the medium heat, and add the cooked noodles with the ¼ cup cooking water into the pan. Heat through and keep stirring until the cooking water turns to a saucy consistency ๐ฅ
5. Immediately add this to the egg mixture bowl, and quickly and vigorously stir the hot noodles with the egg mixture until the cheese melts and you get a glossy sauce. โจ
6. Plate up, and garnish with the seaweed strips, spring onion, and shichimi/nanami ๐ฝ๏ธ
7. Enjoy! ๐

๐ Chicken Katsu Don Recipe
This is a classic simple Japanese chicken katsu lovers’ katsu don recipe. Using good quality, tasty free range thigh fillets is the key to success. Serve with flavourful miso soup to satisfy your tummy and soul. ๐
โฑ๏ธ Prep time: 10 minutes
๐ฅ Cook time: 10 minutes
๐ฝ๏ธ Serves: 2
๐ฅ Ingredients
2 Free Range fresh chicken thigh fillets
๐ง salt
๐ถ๏ธ pepper
1/2 cup plain flour
๐ฅ 1 Egg, beaten
๐ 1 cup mama san panko breadcrumbs
๐ Katsu sauce
3 tbsp Worcestershire sauce
๐ถ 2 tbsp mama san mirin
๐ 2 tbsp tomato ketchup
๐ง 1 tbsp water
๐ฅฌ 1 cup finely shredded cabbage
๐ 2 portions cooked mama san sushi rice
๐ข๏ธ Cooking oil for shallow frying
๐งป Kitchen paper towel to drain
๐ Serve with
mama san instant miso soup
๐ Method
1. Lay out and place chicken between 2 sheets of baking paper or cling film and pound lightly with a rolling pin to flatten slightly and make the piece evenly thick. Slit and butterfly the thicker parts if necessary. ๐จ
2. Season with salt and pepper, then dust with flour, dip in beaten egg, and coat with panko. ๐ฅ
3. In a large frypan, heat about 2 cm deep of oil over medium high heat. When the oil is medium high temperature (170C), slide the chicken katsu into the pan. Leave to cook for 5 minutes, until the bottom side is crisp and well browned. Turn over. Cook the other side for 4-5 minutes until crispy and cooked through. Drain on kitchen paper and leave to rest for 3 minutes before slicing. Slice in bite size strips. ๐ณ
4. Meanwhile, mix all the ingredients for katsu sauce in a small heatproof bowl. Microwave without cover for 60 seconds to let the alcohol in mirin evaporate. โก
5. Place rice in two individual bowls. Arrange cabbage and chicken katsu on top, then drizzle with the katsu sauce. ๐ฅฃ
6. Serve accompanied with mama san instant miso soup. Itadakimasu. ๐

Method ๐
1. Preheat oven to 160°C (fan) or 180°C (conventional). Line a tray with baking paper.
2. Slice chicken into bite-sized strips๏ธ
3. Whisk sauce: Miso paste + soy + honey + sesame oil = flavour explosion! ๐
4. Mix coating: Panko breadcrumbs + sesame seeds. โจ
5. Dip & coat: Chicken in miso mix, then panko/sesame. Lay on tray & repeat!
6. Bake: Spray with oil, roast 12 mins. Flip & bake 1 more min for golden perfection. โฒ๏ธ

Always cook at least two cups of rice, as you want at least 2cm of rice covering the base of the pot. ๐ Only cook one cup if you have a very small pot. ๐ข๏ธ
### Rice Cooker Method ๐๐
1. Measure 2 cups of rice into your rice cooker. ๐
2. Fill with water ๐ง, wash ๐งผ, drain ๐ฐ, and repeat 3 times. ๐

6. Once boiling, reduce to low heat and let it simmer for 20 minutes. ๐

This Miso Salmon Donburi is a flavour explosion! ๐ Sweet and savoury miso-marinated salmon, grilled to caramelised perfection, served over fluffy rice with veggies and a drizzle of Kewpie Deep Rpasted Sesame Dressing. ๐ A refreshing, delicious meal! ๐๐ฅ
Serves 4 ๐ฅ
Ingredients
- 2 tbsp mama san Miso Paste ๐ฅข
- 1 tbsp mama san Mirin ๐ถ
- 1 tbsp mama san Cooking Sake ๐ถ
- 1 tsp mama san Soy Sauce ๐ฅฃ
- 2 large salmon fillets ๐
- 2 cups mama san Sushi Rice ๐
- 2 ¾ cups water ๐ง
- 2 cups mama san Shelled Edamame Soybeans๐ซ
- 2 carrots ๐ฅ
- ¼ cabbage ๐ฅฌ
- 1 spring onion ๐ฑ
- Kewpie Deep Roasted Sesame Dressing ๐ฅ
- ½ cucumber (optional) ๐ฅ
- 5cm daikon radish (optional) ๐ฅ
- 1 chili (optional) ๐ถ๏ธ
- Toasted sesame seeds (optional) ๐พ
- Shichimi (optional) ๐ฅ
Instructions
1. In a wide bowl, whisk miso, mirin, sake, and soy sauce until smooth. ๐ฅฃ
2. Coat salmon fillets in marinade, cover, and chill for 20 mins to 24 hrs (longer = tastier!). โ๏ธ
3. Rinse rice, add water, and cook. ๐
4. Boil edamame for 3 mins, strain, and set aside. ๐ซ
5. Finely chop veggies and set aside. ๐ฅ๐ฅฌ
6. Preheat oven to 200ºC on fan bake. ๐ฅ
7. Place marinated salmon on a lined baking tray. ๐
8. Bake for 8 mins, then grill for 5 mins. ๐ด
9. Rest salmon for 5 mins. โณ
10. Assemble bowls: rice base, veggies around, salmon on top, sprinkle with spring onion, and drizzle with Kewpie dressing.
