- 2 large boneless, skinless chicken thighs 🍗
- Salt & pepper 🧂
- ½ cup flour 🌾

- ⅙ green cabbage (about 2 cups shredded) 🥬

- Bulldog Tonkatsu Sauce 🍶
Method
1. Place each chicken thigh in a zip-lock bag or between baking paper. Pound gently with a rolling pin or meat mallet to about 1 cm thick. 🔨
2. Season both sides with salt and pepper.
3. Set up three bowls: flour, whisked eggs, and mama san panko.
4. Dredge each thigh: flour first, then egg, then press firmly into panko for a thick, even coating. Set aside.
5. Heat oil in a frying pan over medium heat (about 1 cm deep).
6. Prepare a wire rack lined with paper towels for draining.
7. Fry each thigh 4 minutes per side until golden and cooked through. Drain on the rack and sprinkle lightly with salt. 🌟

Ingredients 🛒
- ¾ cup granulated sugar 🍚
- ¼ cup water 💧
- ½ cup cream 🥛
- 2 tbsp mama san Miso Paste 🌾
- 2 packs Vanilla Yukimi Frozen Dessert 🍨
Instructions 👩🍳
1. In a heavy-based pot on medium heat 🔥, add the sugar and water and stir to combine.
2. Bring mixture to a boil without stirring.
3. Reduce heat and let it bubble 🫧 and caramelise until the sugar becomes a deep golden brown and wisps of smoke just start to form, then remove pot from heat.
4. Once off the heat, carefully pour in the cream in two batches while stirring to combine 🥄.
5. If the caramel starts hardening up, return to the stove on low heat and stir until the caramel is liquid again.
6. Whisk in the miso.
7. Set aside to cool 🧊

This Teriyaki Chicken Donburi is simple, satisfying healthy comfort food at its best. Juicy chicken glazed in a glossy homemade teriyaki sauce is served over warm sushi rice with crisp veggies, edamame, and a little Kewpie on top. Balanced, nourishing, and full of flavour, it’s an easy weeknight bowl that never disappoints. 😋
Serves 2
Teriyaki Sauce
¼ cup mama san soy sauce
¼ cup mama san sake
¼ cup mama san mirin
1 tbsp sugar (optional)
1. Combine ingredients in a large saucepan over high heat
2. Bring to boil, then turn heat down and simmer until it reduces by half. The consistency should be like a light syrup. The wider the pan, the faster it will reduce so keep an eye on the reduction. For me it takes about 10 minutes. ✨
Teriyaki Chicken Donburi
2 tsp cooking oil
1 large chicken breast
1 tbsp teriyaki sauce
1 tbsp water
2 servings freshly cooked mama san sushi rice 🍚
1 cup mama san shelled edamame, cooked 🫛
⅛ cabbage, finely shredded 🥬
½ carrot, julienned 🥕
¼ cup mama san sushi ginger
Kewpie mayonnaise
2 tbsp sliced spring onion greens 🌱
S&B nanami/shichimi/7 spice 🌶️
Extra teriyaki sauce
1. Add the cooking oil to a frying pan and bring to high heat 🔥
2. Brown the chicken on both sides until very golden
3. Reduce to medium-low heat and add 1 tbsp teriyaki sauce and 1 tbsp water
4. Cover with a lid and simmer for 10 minutes or until cooked through. Flip the chicken half way through
5. Transfer to a chopping board and slice ~0.5cm thick. Pour the pan sauce over the chicken 🐔
6. Assemble the donburi bowls starting with the rice, then vegetables, chicken, sushi ginger, a dollop of mayo, spring onions and pour over some extra teriyaki sauce 🥗

For the Tornado Egg:
● 4 Better eggs + 2 yolks (green box) 🥚
● A pinch of salt 🧂
● 2 tsp milk 🧀
● Butter, for frying 🧈
Method 🍽️
🌟 Prepare the Rice Filling
1️⃣ Cook the Mama San fried rice according to the
packet instructions.
2️⃣ Add the edamame beans to the rice and stir well,
cooking until heated through. Toss the rice often to
combine evenly.
🥚 Prepare the Tornado Egg 🌪️
1️⃣ In a bowl, whisk together the eggs, yolks, a pinch of
salt, and milk until smooth.
2️⃣ Heat a small non-stick frying pan over medium-low
heat and melt a generous knob of butter.
3️⃣ Pour half of the egg mixture into the pan.
4️⃣ As the egg starts to set, use chopsticks or tongs to
gently pull the edges toward the centre, creating folds.
5️⃣ Continue twisting and rotating the pan slowly to
form a spiral or “tornado” shape. Once the egg is set
but still creamy in the centre, carefully remove it from
the pan and set aside.
6️⃣ Repeat with the remaining egg mixture to make the
second tornado egg.
🍴 Assemble the Tornado Omelette
1️⃣ Spoon half of the fried rice into a small bowl, gently
pressing it down to form a neat shape. Invert the bowl
onto a plate to create a mound of rice.
2️⃣ Gently place one tornado egg on top of the rice.
3️⃣ Repeat the process with the remaining rice and egg

Instructions
1. Toast the crunch 🔥
Place peanuts and sesame seeds in a dry frying pan. Toast over medium heat, stirring frequently, until sesame seeds turn pale golden (≈ 3–5 mins). Set aside to cool.
2. Prep the slaw 🥗
Toss green cabbage, red cabbage, grated carrot, sliced capsicum, spring onions and chopped coriander together in a large bowl.
3. Shake up the dressing 🫙
Add all dressing ingredients to a screw-top jar. Shake shake shake! 👀 Taste and adjust – more honey for sweetness, more sesame oil for nuttiness, or extra salt if needed.
4. Dress & toss 💃
Pour dressing over the slaw and mix until everything is beautifully coated.
5. Finish with crunch ✨
Sprinkle the toasted peanut-sesame mix generously over the top right before serving.

🍲 Hana's Kewpie Sesame Dressing Recipes! 🌰✨
🍜 Chilled Soba Noodle Salad
Ingredients:
- 1 large chicken breast 🐔
- 2 bundles mama san soba noodles 🍜
- ½ red capsicum, sliced 🌶️
- 1 cup mama san shelled edamame, cooked 🟢
- 1 cup green beans, blanched 🫛
- ¼ cup finely sliced spring onion greens 🌿
- ⅓ cup Kewpie Sesame Dressing 🥄
- 1 tbsp toasted sesame seeds 🌾
- 2 tbsp S&B crunchy garlic chilli oil 🔥
- Juice of half a lemon 🍋
Method:
1. Fill a medium pot with water and bring to a boil 🔥
2. Add chicken breast, cover with lid, bring back to boil
3. As soon as it boils, remove from heat and set aside for 20 minutes ⏱️
4. Shred cooled chicken into thin strips 👐
5. Cook soba noodles in boiling water, drain, rinse with cold water, and set aside ❄️
6. Once everything is cooled, toss all ingredients together in a large bowl 🥣 Enjoy chilled!
🎃 Warm Roast Pumpkin Salad
Ingredients:
- ¼ pumpkin 🎃
- 3 tbsp olive oil 🫒
- ½ tsp salt 🧂
- ⅓ cup Kewpie Sesame Dressing 🥄
- Juice of half a lemon 🍋
- 200g rocket 🚀
- ¼ cup toasted pumpkin seeds 🌰
- ¼ cup toasted sesame seeds 🌾
- 1 cup mama san shelled edamame, cooked 🟢
- 100g feta, crumbled 🧀
- 1 sliced red chilli (optional) 🌶️
Method:
1. Preheat oven to 200°C 🔥
2. Peel and cut pumpkin into ~2cm cubes 🔪
3. Toss on baking tray with olive oil and salt
4. Roast for 20 minutes until golden ✨
5. Set aside to cool slightly
6. Mix Kewpie Sesame Dressing with lemon juice 🍋
7. Layer rocket, roasted pumpkin, seeds, edamame, feta on a large plate, then drizzle with dressing 🥗 Drizzle extra if you like!
🥢 Crispy Japanese Slaw
Ingredients:
- ⅓ cup Kewpie Sesame Dressing 🥄
- 2 tbsp mama san sushi vinegar 🍶
- ½ cabbage, shredded 🥬
- 1 carrot, julienned 🥕

A homemade tartare sauce adds background flavours to this burger 🥪 but what really makes it shine is the wasabi sauce! It pairs beautifully with the fish and adds a new spicy twist to a classic burger 😍🔥.

Ingredients 🛒
- 4 New Zealand Dory Crumbed Fish Fillets 🐟
- 4 Brioche Gourmet buns 🍔
- 1 cucumber, thinly sliced 🥒
- 1 red onion, thinly sliced 🧅
- 1 small lettuce, shredded 🥬
- S&B Wasabi Sauce 🌶️
For the Tartare Sauce 🥣
- ½ cup Kewpie mayonnaise 🥪
- 1 gherkin, finely chopped 🥒
- 1 tbsp capers, chopped
- 1 tsp juice from the capers
- 1 tsp Worcestershire sauce
- 1 tbsp parsley, chopped 🌿
Method 👩🍳
1. Make the tartare sauce: combine all the ingredients 🥄 and set aside.
2. Cook the fish fillets according to the packet instructions 🔥🐟.
3. Drizzle the bottom half of the bun with the wasabi sauce 🌶️ - a little if you’re feeling cautious but be as adventurous as you like! Place a handful of shredded lettuce 🥬, some slices of red onion 🧅, and a few slices of cucumber 🥒 on each bun. Put a cooked fish fillet on top 🐟, and add a spoonful of tartare sauce 🥣. Finish with the top half of the brioche bun 🍔.

🥪 Tuna Melt Toasted Sandwich
Makes 2 🧀
Ingredients
- ½ small red onion (or ¼ large) 🧅
- 1 spring onion 🌱
- 185g can tuna, drained 🐟
- ⅓ cup Kewpie mayonnaise 🤍
- Pinch of salt & pepper 🧂
- 2 tbsp S&B crunchy garlic chilli oil 🌶️
- 1 tbsp lemon juice 🍋
- 60g tasty cheese, grated 🧀
- 4 slices sourdough bread 🍞
- 2 tbsp butter (1 tbsp per sandwich) 🧈
Steps
1. Finely dice the red onion & spring onion 🧅🌱
2. Mix red onion, spring onion, tuna, Kewpie, salt, pepper, chilli oil, and lemon juice in a bowl — stir baby stir! 🥄
3. Spread tuna mix over 2 slices of bread, top with grated cheese, then close with the other slices 🥪
4. Medium heat pan + 1 tbsp butter → toast each sandwich until golden & melty on both sides 🤤
5. Slice, admire the cheese pull, and DEVOUR! 🔥

Ingredients
- 185g can tuna, drained 🐟
- ⅓ cup Kewpie mayonnaise 🤍
- Pinch of salt & pepper 🧂
- 1 tsp mama san wasabi 🌿
- 1 tsp S&B shichimi/nanami togarashi 🌶️
- 2 tbsp mama san sushi ginger 🩷
- 2 servings cooked sushi rice (hot & sticky is best!) 🍚
- 1 sheet mama san sushi seaweed ✂️
Steps
1. Mix tuna, Kewpie, salt, pepper, wasabi, shichimi, and finely chopped sushi ginger in a bowl — spicy, zingy perfection! 😚👌
2. Lay out glad wrap, sprinkle with a little salt + shichimi. Add a big spoonful of rice, flatten lightly, place ¼ tuna mix in the centre, top with more rice. Use the plastic to shape into cute triangles — twist & squeeze! Repeat x4 🍙✨
3. Cut the nori sheet into quarters ✂️
4. Wrap each onigiri with a strip of crispy nori right before eating (so it stays snappy!) 🌊

🍗✨ Hana's Crispy Japanese Karaage Chicken ✨
Crispy, juicy, and deeply savoury, this Japanese Karaage is marinated for maximum flavour and fried until golden perfection. Light yet dangerously snackable, it’s a guaranteed crowd-pleaser — especially with a squeeze of lemon, a sprinkle of nanami, and a generous dollop of Kewpie on the side. You may need to double the recipe!! 😍🔥

⏰ Marinate: 30 mins +
🍳 Cook: ~10 mins
Ingredients
- 300g boneless chicken thigh 🐔
- 1 tbsp grated ginger 🫚
- 1 tbsp mama san soy sauce 🥢
- 2 tbsp mama san cooking sake 🍶
- ¼ tsp ground black pepper
- ¼ cup plain flour
- ½ cup corn flour (cornstarch) 🌽
- 750ml cooking oil (for frying) 🔥
- Kewpie mayonnaise 🥚
- 2 lemon wedges 🍋
- S&B Nanami / 7-spice mix 🌶️
Instructions
1️⃣ Cut the chicken thighs into ~2x2 cm bite-sized pieces.
2️⃣ In a bowl, mix chicken with mama san soy sauce, mama san cooking sake, grated ginger, and black pepper. Stir well, cover, and marinate for at least 30 minutes (longer = more flavour! 😋).
3️⃣ Add the plain flour to the marinated chicken and mix until it forms a light, sticky batter.
4️⃣ Heat oil in a medium pot to 160°C 🔥.
5️⃣ Spread corn flour on a large plate/tray. Coat each chicken piece evenly in corn flour (shake off excess!).
6️⃣ Fry in batches (don’t overcrowd!) for about 4 minutes or until golden and crispy 🤤. Transfer to a paper towel-lined rack.

Fresh, vibrant summer salad that’s perfect for a light lunch al fresco ☀️ Serve with crusty bread or your favourite crackers!

Ingredients 🛒
• 5 Eggs 🥚
• 1 cup mama san edamame, cooked 🟢
• 2 heads baby cos lettuce leaves 🥬
• 1 big handful fresh mint leaves 🌿
• 2 tbsp Kewpie mayonnaise
• 2 tbsp Greek yoghurt
• 1 tsp Dijon mustard
• Juice of ½ lemon 🍋
• 1 tbsp olive oil
• ¼ cup shaved Parmesan cheese 🧀
• Splash of DYC white vinegar (for poaching)
• Salt & pepper to taste 🧂
Method 👩🍳
1️⃣ Bring a large pot of water to the boil and cook the edamame according to packet instructions. Drain and set aside to cool 🌱
2️⃣ Bring another pot of water to a gentle simmer, add a splash of vinegar. Crack each egg into a small bowl, then carefully slide into the water. Poach 3-4 mins until whites are set but yolks are still runny. Lift out with a slotted spoon and cool 🥚✨
3️⃣ In a small bowl, whisk together Kewpie mayo, Greek yoghurt, Dijon mustard, lemon juice, and olive oil until smooth and creamy. Season with salt & pepper 🍋🥄
4️⃣ Arrange baby cos leaves on a big platter, top with poached eggs, scatter over cooled edamame, drizzle generously with the dressing, sprinkle shaved Parmesan, and finish with fresh mint leaves 🌿🧀 Season again if you like!

Instructions
1️⃣ Cook mama san soba noodles according to packet. Drain, rinse thoroughly under cold water, and set aside to cool completely.
2️⃣ Boil eggs for 8 minutes, cool in ice water, peel, roughly chop, and mix with Kewpie mayo. Season with salt & pepper 🧂.
3️⃣ Make the dressing: Whisk together peanut butter, mama san sushi vinegar, mama san soy sauce, sriracha, and olive oil until smooth and creamy 🤤.
4️⃣ Assemble the jars (layering = no soggy noodles!):

🍆 Miso Baked Eggplant 🍆

Ingredients
- 1 eggplant
- A pinch of salt
- 3 tbsp cooking oil
- 3 tbsp mama san Miso Paste

Steps
1. Preheat oven to 220°C on bake function 🔥
2. Slice the eggplant in half lengthwise, then score the cut side in a criss-cross pattern (a few mm deep)
3. Lightly salt and oil the cut faces
4. Place cut-side down on a lined baking tray and bake for 15 minutes
5. While it bakes, mix the mama san Miso Paste, mirin, cooking sake, and sugar in a small bowl until smooth
6. After 15 minutes, flip the eggplant cut-side up and spread the miso glaze generously 🤤
7. Switch the oven to grill mode
8. Grill for about 5 minutes until the glaze is bubbling and beautifully caramelised

Ingredients
- 4 United Food Co. steamed bao buns
- 4 United Fish Co. crumbed dory fillets
- 1 small carrot, julienned 🥕

- Sweet chilli sauce
- Fresh coriander leaves
Method
1. Cook the United Fish Co. crumbed dory fillets according to the packet – oven or air-fry until golden and crispy 🔥
2. Steam the United Food Co. bao buns until soft and pillowy (about 6–8 minutes if frozen)
3. Open each warm bao and start the stack: pop in a hot crumbed dory fillet
4. Pile on the julienned carrot, spring onion, and a generous forkful of pickled red onions

🌺🍣 Salmon Poke Bowl – Hawaiian vibes with a mama san Japanese twist! 🍣🌺
Fresh, light, and only 20 minutes prep — this Salmon Poke Bowl gives the Hawaiian classic a Japanese twist. The salmon is marinated in a punchy, flavour-packed sauce and served with crisp veggies over refreshing sushi rice. It’s the perfect summer dinner.✨
Serves 4 | Prep: 20 mins
🐟 Salmon Poke
- 1 shallot, finely diced
- 500g sashimi-grade salmon, cut into 1cm cubes
- 4 tbsp mama san soy sauce
- 2 tsp mama san sake
- 1 tbsp mama san sushi vinegar
- 2 tsp mama san wasabi (optional)
- ½ tsp S&B nanami/shichimi/7 spice mix (optional)
- 2 tbsp Kuki naturally pressed sesame oil
- ⅓ cup Kewpie mayonnaise
- 2 tbsp toasted sesame seeds
- Small pinch of salt
👉 Mix everything in a bowl, gently toss until the salmon is beautifully coated, cover and let it marinate in the fridge for up to 1 hour. Flavour explosion incoming! 💥
🍚 Sushi Rice
- 2 cups mama san sushi rice
- 2 cups water
- 50ml mama san sushi vinegar
1. Cook rice according to the packet, or follow the rice cooking tutorial in a previous post
2. In a large wide bowl, add the freshly cooked hot rice and mama san sushi vinegar
3. Gently fold the rice to mix the sushi vinegar. Do this carefully to ensure you don’t crush the rice grains
4. Set aside to cool for 15 minutes
🥑 Assembly
- 1 cup mama san edamame (boil 2 mins & drain)
- 1 avocado, sliced
- ½ cucumber, sliced
- ⅓ cup mama san sushi ginger
- 1 spring onion, finely sliced
- 4 lemon wedges
1. Serve the rice into 4 bowls and divide the salmon poke across them
2. Top with the veggies, and nanami powder if you like spicy!

🍣 Make Sushi with me ✨ Part 2 - Prep Fillings 🥒🥑
Homemade sushi just hits different! 🏠💕 I did the math and this entire recipe costs only $3.70 per person — that’s 50-70% cheaper than takeaway! 😍 Today we’re using smoked salmon, but you can totally swap the protein:
✨ Bougie: sashimi-grade fish
✨ Mid: teriyaki chicken
✨ Budget: teriyaki tofu or tuna mayo 🐟
Serves 4 people (8 pieces each 🍱)
Ingredients 🛒
- 2 cups mama san sushi rice
- 2 cups water
- 50 ml mama san sushi vinegar
- 100 g smoked salmon 🐟
- ¼ carrot 🥕
- ¼ cucumber 🥒
- ¼ capsicum 🫑
- ½ avocado 🥑
Sushi Rice 🍚
1. Measure 2 cups of mama san sushi rice into your rice cooker (see rice video for instructions to cook rice with a pot)
2. Fill with water, wash, drain, and repeat 3 times
3. Once well drained, measure 2 cups of water and add into the pot and cover with a lid
4. Turn rice cooker on
5. After it has cooked, let it stand for 15 minutes
6. Do not remove the lid until now
7. In a large wide bowl, add the freshly cooked hot rice and 50ml of mama san sushi vinegar
8. Gently fold the rice to mix the sushi vinegar. Do this carefully to ensure you don’t crush the rice grains
9. Set aside to cool to room temperature
Fillings 🥗
1. Slice the vegetables into thin strips
2. Unpack the smoked salmon
3. Prepare the fillings onto a plate ready for rolling

🔪 Sharp Knife

Let’s Roll! 👇
1. Place the sushi rolling mat on the bench aligned
horizontally so you can roll away from you and toward
you 🎋
2. Place a sheet of sushi seaweed rough side up onto
the mat 🌿
3. Spread ¼ of the sushi rice onto the seaweed and
leave a 3cm strip of uncovered seaweed at the end 🍚
4. Lay out your choice of fillings horizontally across the
middle of the rice 🥑🐟🥒
5. Using your thumbs and forefingers, hold the
seaweed and rolling mat together and lift over the
fillings. Tuck over the edge, and gently press the roll to
tighten. Unravel and life the roll to the front of the mat.
Wrap the mat around the roll right to the end, and
gently squeeze across the roll🤗
6. Repeat 3 more times 3️⃣
7. Prepare a chopping board, sharp knife, and wet
cloth🔪
8. Make sure to wipe the knife with the wet cloth before
each cut✨
9. Always cut the roll in the middle. Cut the roll in half
first, then quarters, then eighths ✂️
10. Serve with mama san soy sauce, and sushi ginger
and wasabi if you like

🍳 Japanese-Style Bacon & Egg on Toast Recipe 🇯🇵

🥒 Spicy Pickled Cucumber
- ½ telegraph cucumber, sliced lengthways
- ½ small red chilli, seeds removed, thinly sliced 🌶️
- 2 tbsp mama san sushi vinegar
- 1 tbsp mama san soy sauce
- 1 tbsp Kuki sesame oil
- 1 tbsp white sesame seeds, lightly toasted ✨
🥑 Smashed Avocado
- 2 avocados, flesh removed
- 1 tbsp Kewpie mayo
- 3–4 cm mama san wasabi paste (adjust for heat! 🔥)
- Salt & pepper to taste
🥓 Maple Miso Bacon
- 250g Streaky bacon (1 pack)
- 2 tbsp mama san miso paste
- 1 tbsp maple syrup 🍁
🍳 To Serve
- Oil for frying
- 4 Eggs size 8 eggs
- 4 thick bread slices
- 1 spring onion, finely sliced 🧅
📋 Method
1. 🔥 Preheat oven to 200°C. Line tray with baking paper, lay out bacon. Mix miso + maple syrup (thin with water if needed). Brush on generously & bake 10–12 min till golden. Keep warm!
2. 🥒 For cucumber: Smash halves in a zip-lock bag with a rolling pin. Add chilli, vinegar, soy, sesame oil & seeds. Seal & fridge for 15 min.
3. 🥑 Crush avos with fork, mix in Kewpie mayo + wasabi. Season with salt & pepper.🌶️
4. 🥚 Heat oil in pan over med-high. Fry eggs 3–4 min till whites set but yolks runny.
5. 🍞 Toast bread, spread with avo mix. Top with bacon, egg & pickled cukes. Garnish with spring onion. Dig in!

🍗 Chicken Katsu Don Recipe
This is a classic simple Japanese chicken katsu lovers’ katsu don recipe. Using good quality, tasty free range thigh fillets is the key to success. Serve with flavourful miso soup to satisfy your tummy and soul. 😋
⏱️ Prep time: 10 minutes
🔥 Cook time: 10 minutes
🍽️ Serves: 2
🥘 Ingredients
2 Free Range fresh chicken thigh fillets
🧂 salt
🌶️ pepper
1/2 cup plain flour
🥚 1 Egg, beaten
🍙 1 cup mama san panko breadcrumbs
🍖 Katsu sauce
3 tbsp Worcestershire sauce
🍶 2 tbsp mama san mirin
🍅 2 tbsp tomato ketchup
💧 1 tbsp water
🥬 1 cup finely shredded cabbage
🍚 2 portions cooked mama san sushi rice
🛢️ Cooking oil for shallow frying
🧻 Kitchen paper towel to drain
🍜 Serve with
mama san instant miso soup
📋 Method
1. Lay out and place chicken between 2 sheets of baking paper or cling film and pound lightly with a rolling pin to flatten slightly and make the piece evenly thick. Slit and butterfly the thicker parts if necessary. 🔨
2. Season with salt and pepper, then dust with flour, dip in beaten egg, and coat with panko. 🥄
3. In a large frypan, heat about 2 cm deep of oil over medium high heat. When the oil is medium high temperature (170C), slide the chicken katsu into the pan. Leave to cook for 5 minutes, until the bottom side is crisp and well browned. Turn over. Cook the other side for 4-5 minutes until crispy and cooked through. Drain on kitchen paper and leave to rest for 3 minutes before slicing. Slice in bite size strips. 🍳
4. Meanwhile, mix all the ingredients for katsu sauce in a small heatproof bowl. Microwave without cover for 60 seconds to let the alcohol in mirin evaporate. ⚡
5. Place rice in two individual bowls. Arrange cabbage and chicken katsu on top, then drizzle with the katsu sauce. 🥣
6. Serve accompanied with mama san instant miso soup. Itadakimasu. 🙏

- ⅓ cup Kewpie mayonnaise 🥚

- Assorted raw vegetables: carrots, celery, radishes, sugar snap peas, cucumber, courgette, mushrooms, mini leaf lettuce, etc. 🥕🌱
Method
1. Combine the mayonnaise, miso, honey, and water (if needed) in a bowl. Mix well until smooth and creamy.
2. Arrange the vegetables on a platter and serve with the miso mayo dip in a bowl.
3. Drizzle crunchy garlic chilli oil over the dip for extra zing (optional).

Udon Carbonara Recipe🍜🇮🇹🇯🇵
This is an Italian-Japanese fusion, so you purists out there may want to look away. This Udon Carbonara swaps pasta for chewy udon noodles, keeps the creamy, cheesy sauce, and adds crispy bacon for that ultimate comfort factor. The spring onion, seaweed, and shichimi/nanami togarashi gives it a distinctive Japanese flavour profile. Quick, indulgent, and totally crave-worthy—this one’s a weekday dinner winner! 😋
Serves 2
Ingredients:
- 1 tsp ground black pepper 🧂
- 2 eggs 🥚🥚
- 50g grated parmesan 🧀
- 2 bundles mama san udon
- 4 rashers streaky bacon 🥓
- ¼ cup udon water 💧
- ¼ sheet mama san sushi seaweed, cut into small strips 🌿
- 1 spring onion, finely sliced 🧅
- S&B Shichimi/nanami togarashi (Japanese 7 spice mix) - optional 🌶️
Instructions:
1. In a large bowl, whisk the pepper, eggs, and parmesan and set aside 🥣
2. Finely dice the bacon, and cook on medium-low heat until the fat renders out and the bacon goes crispy. Keep in the pan, and set aside 🔥
3. Boil the udon and reserve ¼ cup of the cooking water. Once cooked, drain and set aside 🍲
4. Bring the bacon pan back to the medium heat, and add the cooked noodles with the ¼ cup cooking water into the pan. Heat through and keep stirring until the cooking water turns to a saucy consistency 🥄
5. Immediately add this to the egg mixture bowl, and quickly and vigorously stir the hot noodles with the egg mixture until the cheese melts and you get a glossy sauce. ✨
6. Plate up, and garnish with the seaweed strips, spring onion, and shichimi/nanami 🍽️
7. Enjoy! 🙌

1. Finely chop up your leftover veggies and protein 🔪

- 3 chicken thighs 🐔

Method 📋
1. Preheat oven to 160°C (fan) or 180°C (conventional). Line a tray with baking paper.
2. Slice chicken into bite-sized strips️
3. Whisk sauce: Miso paste + soy + honey + sesame oil = flavour explosion! 🌀
4. Mix coating: Panko breadcrumbs + sesame seeds. ✨
5. Dip & coat: Chicken in miso mix, then panko/sesame. Lay on tray & repeat!
6. Bake: Spray with oil, roast 12 mins. Flip & bake 1 more min for golden perfection. ⏲️
7. Stir dip: Mayo + sweet chilli. Serve hot with your strips! 🍲

Steps:
1. Fry enoki + oil + 1 tbsp miso butter till golden; set aside 🍳✨

3. Toss udon in pan w/ ⅓ cup water, 2 tbsp miso butter, soy 🥣
4. Simmer to glossy sauce 🌟

🍗 Miso Butter Chicken
Serves 2 | Juicy! Veggie Option: Tofu 🥬
Ingredients:
- 2 tsp oil 🛢️
- Salt 🧂
- 2 boneless thighs (or tofu)
- 2 tbsp mama san Cooking Sake 🍶
- 2 tbsp miso butter 🧈
- S&B Nanami (opt. 🌶️)
- Lemon wedge (opt. 🍋)
Steps:
1. Salt chicken 🧂
2. Heat oil high; brown both sides 🔥
3. Low heat: Add miso butter + sake 🥄
4. Lid on, simmer 10 mins ⏲️
5. Rest 5 mins, slice 😌
6. Pour sauce over; top w/ shichimi 🌶️

One cup of uncooked rice serves two people. 👥
Always cook at least two cups of rice, as you want at least 2cm of rice covering the base of the pot. 📏 Only cook one cup if you have a very small pot. 🛢️
### Rice Cooker Method 🍚🔌
1. Measure 2 cups of rice into your rice cooker. 📏
2. Fill with water 💧, wash 🧼, drain 🚰, and repeat 3 times. 🔄
3. Once well drained, measure 2 cups of water 💧 and add into the pot, then cover with a lid. 🛡️
4. Optional step: Soak for up to 30 minutes. ⏰
5. Turn rice cooker on! ▶️
6. After it has cooked, let it stand for 15 minutes. ⏳
7. Do not remove the lid until now! 🚫
8. Gently fold the rice to fluff it 🥄, and you’re ready to serve! 😋
### Stove Top Method 🍚🔥
1. Measure 2 cups of rice into your pot. 📏 Make sure to use a pot with a thicker base, as a thin based pot may not cook through as evenly. 🥘

2. While they cook, halve the cucumber and slice into ribbons with a peeler. 🥒
3. Whisk together all satay sauce ingredients until smooth. Add water if needed to thin. 🥜
4. Steam the bao buns according to the package. 🥟
5. Assemble your bao buns: layer tenders, top with cucumber ribbons, satay sauce, chili, coriander, and crushed peanuts. 🥟🌶️

🌱 1 cup mama san Edamame Soybeans, cooked
🥬 2 heads baby cos lettuce leaves
🌿 1 handful fresh mint leaves
🥄 2 tbsp Kewpie mayonnaise
🧀 2 tbsp Greek yoghurt
🥄 1 tsp Dijon mustard
🍋 Juice of 1/2 a lemon
🫒 1 tbsp olive oil
🧀 1/4 cup shaved Parmesan cheese
🍶 DYC white vinegar (for poaching eggs)
🧂 Salt and pepper, to taste
🍳 Method
1️⃣💦 Bring a large pot of water to a boil and cook the edamame soybeans per packet instructions. Drain and set aside to cool.
2️⃣🍲 In a pot, bring water to a gentle simmer with a splash of DYC white vinegar. Crack each egg into a small bowl, then slide into the water. Poach for 3-4 minutes until whites are set but yolks are runny. Remove with a slotted spoon and cool slightly.
3️⃣🥣 In a small bowl, whisk mayonnaise, Greek yoghurt, Dijon mustard, lemon juice, and olive oil until smooth. Season with salt and pepper.
4️⃣🥗 Arrange lettuce leaves on a platter, top with poached eggs, and drizzle with dressing. Sprinkle with Parmesan and garnish with mint leaves. Season with salt and pepper.

1️⃣ Fry the wonton strips 🔥: Heat 5 mm of cooking oil in a small skillet. Fry wonton wrapper strips in small batches until golden, turning as they brown (they cook fast, so watch closely!). Drain on paper towels.
2️⃣ Prep the noodles 🍜: Cook Trident vermicelli rice noodles according to package instructions.
3️⃣ Make the plum dressing 🥣: Combine all dressing ingredients in a small jar and shake well.
4️⃣ Assemble the salad 🥗: Place noodles in the centre of a large platter. Arrange cucumber, carrot, capsicum, lettuce, radishes, spring onions, pomelo/grapefruit, pickled ginger, and salmon sashimi around the noodles.

Crispy, golden chicken katsu, silky Japanese curry, fluffy rice, and charred broccolini—this is comfort food done right! 😍 It’s a warm hug in a bowl, and while it looks flash, it’s dead easy to whip up. • 2 large chicken breasts 🐔
• Salt & pepper 🧂
• ½ cup flour 🌾
• 2 eggs 🥚

Method
1. Rinse the rice, add the measured water, and cook. 🍚
2. Lay each chicken breast flat and slice horizontally to make two pieces per breast. 🗡️
3. Season both sides with salt and pepper. 🧂
4. Set up three wide bowls with flour, whisked eggs, and panko. 🥣
5. One piece at a time, coat chicken in flour, then egg, then panko. Press gently to get a good panko crust. Pop onto a clean plate and repeat. 🍗
6. Heat a frying pan to medium with ¼ cup oil (or enough for 1cm depth). 🍳
7. Prep a wire cooling rack lined with paper towels. 📝

This iconic Japanese sandwich is simple yet so good 🇯🇵. It’s a classic for a reason—no need to mess with perfection! The katsu 🍗, shredded cabbage 🥬, and Bulldog sauce 🍶 are the stars of this sando. If you’ve tried it, you know how this simple combo packs a punch 👊. If you haven’t, this is your sign to give it a go! ✨
Serves 4
Ingredients:
• 2 large chicken thighs (boneless & skinless) 🍗
• Salt & pepper 🧂
• ½ cup flour 🌾
• 2 eggs 🥚
• 1 ½ cup mama san Panko Breadcrumbs 🍞

• ⅙ green cabbage 🥬
• 1 tbsp lemon juice 🍋

3. Fill three wide bowls with flour 🌾, whisked eggs 🥚, and panko 🍞.
4. Coat each thigh: flour ➡️ egg ➡️ panko. Press gently in the panko to get a thick, even layer. Move to a clean plate 🍽️ & repeat.
5. Heat a frying pan to medium 🔥 with ¼ cup oil (or enough for 1 cm depth).
6. Set up a wire rack with paper towels 🧻 for draining.
7. Fry each thigh ~4 mins per side until golden brown 🌟. Transfer to the rack & sprinkle with salt 🧂.
8. Shred the cabbage finely (use a mandolin if you have one!) until you’ve got ~2 cups 🥬.

Method 🍳

● ½ cup mama san Shelled Edamame Soybeans 🌱
For the Tornado Egg:
● 4 Better eggs + 2 yolks (green box) 🥚
● A pinch of salt 🧂
● 2 tsp milk 🧀
● Butter, for frying 🧈
Method 🍽️
🌟 Prepare the Rice Filling
1️⃣ Cook the Mama San fried rice according to the packet instructions.
2️⃣ Add the edamame beans to the rice and stir well, cooking until heated through. Toss the rice often to combine evenly.
🥚 Prepare the Tornado Egg 🌪️
1️⃣ In a bowl, whisk together the eggs, yolks, a pinch of salt, and milk until smooth.
2️⃣ Heat a small non-stick frying pan over medium-low heat and melt a generous knob of butter.
3️⃣ Pour half of the egg mixture into the pan.
4️⃣ As the egg starts to set, use chopsticks or tongs to gently pull the edges toward the centre, creating folds.
5️⃣ Continue twisting and rotating the pan slowly to form a spiral or “tornado” shape. Once the egg is set but still creamy in the centre, carefully remove it from the pan and set aside.

Ingredients:
• 🥚 5 Better Eggs
• 🌱 1 cup mama san Shelled Edamame Soybeans, cooked
• 🥬 2 heads baby cos lettuce leaves
• 🌿 1 handful fresh mint leaves
• 🥄 2 tbsp Kewpie mayonnaise
• 🥄 2 tbsp Greek yoghurt
• 🥄 1 tsp Dijon mustard
• 🍋 Juice of 1/2 a lemon
• 🫒 1 tbsp olive oil
• 🧀 1/4 cup shaved Parmesan cheese
• 🍶 DYC white vinegar (for poaching the eggs)
• 🧂 Salt and pepper, to taste
Method:
1️⃣ Bring a large pot of water to the boil and cook the edamame soybeans in accordance with the instructions on the packet. Drain and set aside to cool.
2️⃣ Bring a pot of water to a gentle simmer, adding a splash of DYC white vinegar. Crack each egg into a small bowl, then carefully slide it into the simmering water. Poach for 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside to cool.
3️⃣ In a small bowl, mix together the Kewpie mayonnaise, Greek yoghurt, Dijon mustard, lemon juice, and olive oil. Whisk until smooth and creamy. Season with salt and pepper to taste.
4️⃣ Arrange the salad leaves on a platter, then add the poached eggs on top. Drizzle the dressing over the salad and eggs. Add shaved parmesan cheese on top. Garnish with fresh mint leaves. Season with salt and pepper.

Ingredients:
🧈 3 tbsp The Good Oil Extra Virgin Rapeseed Oil
🧄 1 clove garlic, crushed
🍞 1 cup mama san panko crumbs
🌻 2 tbsp FreshLife sunflower seeds
🎃 2 tbsp FreshLife pumpkin seeds
Method:
❶ Add the rapeseed oil to a large non-stick pan over medium heat. Add 1 clove of crushed garlic to the oil, then add both lots of seeds and fry for a couple of minutes.
❷ Add the mama san panko crumbs to the pan and fry for a few more minutes, until golden and crunchy. Stir regularly to ensure it all toasts evenly.

KARAAGE CHICKEN SUSHI CUPS🍣🍗
Ingredients:
For the sushi cups:
• 1 box Waitoa Free Range Karaage Chicken 🐔
• 1 1/2 cups cooked mama san sushi rice 🍚
• 1 tsp rice vinegar (or mama san sushi vinegar) 🍶
• 12 mama san nori squares, cut to fit muffin tray cups 🍱
To garnish:
• Kewpie 500g Mayonnaise 🥄
• Sesame seeds 🍃🌰
• Spring onions, sliced 🧅
Method:
1️⃣ Preheat your oven to 200°C and lightly grease a muffin tray. 🍳
2️⃣ Cook karaage chicken for 15 minutes. Turn the oven down to 180°C. ⏰🔥
3️⃣ In a mixing bowl, combine the mama san sushi rice and vinegar and mix until well combined. 🥣
4️⃣ Place 2-3 tablespoons of rice in the center of a nori sheet and place in a muffin hole. Repeat for all cups. 🍙
5️⃣ Slice the karaage chicken into 4-6 pieces and top each cup with up to 6 bits. Bake for 10 minutes. 🔪
6️⃣ Once ready, remove from the tray, drizzle with Kewpie mayonnaise, and sprinkle with spring onions and sesame seeds. 🌿🍂

Miso Chicken Strips 🍗
Everyone will love these tasty Izakaya-style morsels. Flavourful chicken pieces are dipped in a sweet, savoury and umami-rich honey miso sauce, then coated with crispy panko mix. Perfect served with pre-dinner drinks 🍹 or served with plain steamed rice 🍚 as main.
Prep time: ⏰ 10 minutes
Cook time: ⏰ 13 minutes
Serves: 4 🍽️
Ingredients 🛒
• 3 Waitoa Free Range chicken thighs 🐔
• 3 tbsp Mama San miso paste
• 2 tbsp Mama San soy sauce
• 2 tbsp liquid honey
• 1 tsp Kuki sesame seed oil
• 2/3 cup Mama San panko breadcrumbs
• 1/3 cup FreshLife sesame seeds
• Dot’s Cooking spray - canola oil
Creamy Chilli Dip 🌶️
• 1/4 cup Kewpie mayonnaise 🥄
• 2 tbsp Trident Sweet Chilli Sauce 🥄
METHOD 📝
1. Preheat the oven to 160°C (fan forced) or 180°C (no fan). Line a shallow baking tray with baking paper. 🔥
2. Cut chicken into bite-sized strips. ✂️
3. Mix the mama san miso paste, soy sauce, honey, and Kuki sesame oil together. 🥣
4. Mix mama san panko breadcrumbs with the sesame seeds. 🍞🌰
5. Dip the pieces of chicken into the miso mixture and then into the panko crumb mixture, making sure it is well covered with crumbs. 🍗
6. Lay the chicken on the lined baking tray and repeat with the rest of the chicken.
7. Spray each piece with a little oil and bake for 12 minutes. 🍳
8. Turn the pieces of chicken over and bake for another 1 minute. 🔄
9. Combine the Kewpie mayonnaise and sweet chilli sauce. Serve with the hot Miso Chicken Strips. 🥣
