FRIED PORK CUTLET CURRY WITH RICE

For Pork Cutlet:

  • 4 pork loin or pork tenderloin slices
  • Salt and pepper to taste
  • All-purpose flour for dredging
  • 2 large eggs, beaten
  • Mama San Panko Breadcrumbs
  • Vegetable oil for frying

For Curry:

  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 tablespoon flour
  • 1 tablespoon tomato paste
  • 800ml chicken or vegetable broth
  • Salt and pepper to taste

For Rice:

  • Mama San Rice, cooked according to package instructions

Prepare the Pork Cutlet:

  • Season pork slices with salt and pepper.
  • Dip each pork slice in flour, dip into beaten eggs, and coat with Mama San Panko Breadcrumbs, pressing gently to adhere.
  • Heat vegetable oil in a pan over medium-high heat. Fry pork slices until golden brown and cooked through. Drain on paper towels.

Prepare the Curry:

  • In a large pot, heat vegetable oil over medium heat. Add chopped onions and garlic, sauté until softened.
  • Add curry powder and flour, stir to combine.
  • Stir in tomato paste and gradually add chicken or vegetable broth while stirring constantly to avoid lumps.
  • Add diced carrots and potatoes. Simmer until vegetables are tender. Season with salt and pepper to taste.

Serve with Rice:

  • Serve Mama San Rice in individual bowls.
  • Place a fried pork cutlet on top of each rice bowl.
  • Ladle the curry sauce over the pork cutlet and rice.

Optional Garnish:

Garnish with chopped green onions or cilantro for added freshness.
